With a title like "swooning imam", how could I help but prepare this dish!
Onions, peppers, tomatoes, cumin, coriander, garlic - cooked and then stuffed into the eggplant shell - and cooked again. This dish was a feast for the eyes, and with its nice spicing, I might have fooled the family about its composition had I not stuffed it into the eggplant shell. It is served with a yogurt-mint sauce.
The one negative - the recipe says it requires 65 mintues to prepare. This is a bit optimistic (took me more like 90 minutes), but whats worse is that then you have to cool it before you serve it. This fooled me, and left me scrambling for dinner last night.
But on the whole, I really enjoyed this dish, and would make it again. By the way, this is a turkish dish (fit mideastern or mediterranian). The story is that an Imam was so pleased by this dish it made him swoon.

I love eggplant but this sounds like a lot of work. I'm usually scrambling to make something quick and easy for dinner. It looks quite beautiful though. I'm almost tempted to try it.
