Terrible. The recipe failed on a number of counts, but the result wasn't very pleasing either - tasted like potato mash cakes with a slight crab flavour.
First of all, you supposed to slightly whip the egg yolks in one bowl, whip the egg whites till foamy in the other, and then mix with all the other ingredients in a third bowl - waste of tools, and why please do the eggs need to get whipped? Any air you've brought in there will get released again when you're trying to form the crab cakes, because if you don't apply at least a little pressure, they'll fall apart completely.
I didn't fare much better with the sauce. Yoghurt, mayonnaise, fresh herbs and watercress in a blender will get you a sauce with the consistency of water; yet, the recipe advises you to 'add more yoghurt if the sauce turns out too thick'. Excuse me?
I actually made a quarter batch using canned crab, and another quarter batch using canned tuna (looking for a cheaper alternative there). Neither worked really well; they were mushy (albeit the crab one slightly less than the tuna), and not even crispy on the outside. All in all, a disappointment.
