In the mood for something special? This cocktail classic is fun! Three drops of bitters are placed on a sugar cube, the sugar cube placed in a champagne flute, 1 oz of cognac put on the sugar cube, and then about 3 or 4 ounces of champagne on top. The sugar cube fizzes like crazy, and only dissolves very slowly.

As with all recipes, this cocktail is only as good as the ingredients. But even with only so-so sparkling wine, these were a treat.
