Fantastic! I think there might have been a typo in this recipe since it called for a 19 ounce can of water chestnuts. I've never heard of one that size. We used a small can and it was plenty. It said to use the white part of the green onion only but we decided to use the green as a garnish and thought it gave it a nice extra touch of flavor. We used ground pork but it also suggests ground turkey or chicken if your prefer. The extra firm tofu was a nice addition as were the edamame which we love. Great in the lettuce but think it would be also good with some rice. We ate two each, one with Sriracha and one with Sambal Oelek both were delicious.
