My husband requested BLTs for his birthday dinner. However, June tomatoes (in Utah) are not spectacular, and so I felt I needed a sandwich that didn't depend so much on tomato quality. I found this sandwich here on cookbooker, reviewed by @aj12754. It includes slightly cooked spinach and mozzarella, and so I figured it would round out a sandwich with a less-than-stellar tomato. I was right - it was a delight.
I used sourdough bread, apple wood-smoked bacon, and a lovely local mozzarella. AJ had mentioned using fresh basil, but it is not called for in this on-line version of the recipe. My family loves basil, and its also too early for a basil harvest in my garden, so I spread a thin layer of pesto on one slice of bread.
Note also that I followed a different method for cooking the bacon. I'm not a fan of bacon, and especially not a fan of cooking bacon, but gave baking the bacon a try. It was fabulous - giving me well cooked and very flat bacon pieces.
The recipe also calls for brushing the bread with olive oil. Instead, I used my misto sprayer, and was able to put a very fine layer on the bread evenly. I think this let me get away with less oil, while still giving me beautiful browning.
