This delicious combination appealed to both fig-lovers and non-lovers alike. The sandwiches also have pesto and fresh basil, and the figs mostly added a bit of sweetness and crunch. 13 daughter has not been in a fresh fig mood this summer, but was surprised that she liked these.
The recipe calls for mini loaves of bread, but the closest I could come (without heating my kitchen by baking) were hard rolls. You assemble the sandwiches, and are instructed to bake (420) for 10 minutes. The top of my rolls were getting very dried out, and so after 5 minutes I covered with foil. This seemed to do the trick.
I made a second set of sandwiches that substituted tomato slices for the fig, and these were also enjoyed. A simple mid-week dinner, it just needed a salad to go along with it.
