We love tomato pies in the summer when we can get wonderful heirloom tomatoes. These tomatoes are starting to arrive here in gardens, farmers markets and produce stands. I got some wonderful local ones and found this new to us tomato pie to try. It was wonderful. My family is still looking forward to one I make that has mayonnaise in it but they said they enjoyed this one as well. This one has dijon, herbs (I used basil and thyme), garlic, olive oil and gruyere cheese. I used an assortment of colors for the tomatoes. She says you can use a store bought pie crust, make your own favorite or use her recipe from the book for Basic Pie Pastry Dough page 351. I used the one from the book.
