A take on traditional pupusas, flatbreads made of fresh masa filled with melted cheese.

The masa ingredients, which included puréed, cooked white beans, were whizzed together in the food processor to form a dough. Mine never quite reached that stage so I added a little more water once I turned it out into a bowl. Having never worked with fresh masa - I really need to do a little more research before approaching some of these recipes - I didn’t know what consistency I was looking for; the recipe could have been a little more helpful here. Though the beans were supposed to make the dough easier to work with, it was clear that it was too dry. At some point I gave up repairing the cracks and just cooked the cheese-filled rounds.

They tasted like freshly made cheesy tortillas…….a delicious snack served with salsa.
