Very simple preparation – olive oil, salt, pepper and grated parmesan – but the resulting flavour of the sweet caramelized fennel topped with the salty crunch of cheese is anything but simple.

I roasted the fennel at a much higher temperature than stipulated in the recipe as it was sharing the oven with this pork roast, so I can’t attest to the accuracy of the baking instructions, but 20 minutes at 450F worked.

Delicious hot or at room temperature.
