This is one of my favorite salads in the book. I find that I can refresh the salad the next day with a squeeze or two of lemon juice and a pinch of cumin.
One of my all time favorite recipes. This salad is a wonderful blend of flavors and textures - great for a potluck! Tastes best on the day you make it or one day after - flavors tend to get bland after that. I usually serve with pita bread and homemade felafel.
