Spaghetti squash really shines in this recipe - it gives body to the gratin, and yet its slightly crunchy texture is maintained. Pairing it with basil was a good fit for my garden, and it gave a nice subtle flavor. A small amount of Gruyere cheese over the top rounds out the flavor.
I tend to shy away from preparing gratins as they are traditionally filled with cream and cheese. This recipe is similar to other gratins from Martha Rose Shulman in that it uses the gratin method, but without overwhelming the vegetables with needless fats.
I will definitely make this one again.
