Hubby and I loved this updated version of tuna casserole. I liked that it had mushrooms and Parmesan cheese in it. It calls for one 5 ounce can of tuna but says you can use two so I did. I like a little more tuna in mine. I loved the Ritz cracker crumbs and butter topping. It says you can also use crushed potato chips instead of crackers and I bet that option would be good as well. I put my casserole together on Sunday to bake on a work night and I was sure glad I did. It was delicious to just put in in the oven to bake while I tossed together a salad to go along side. I think I'll be doing this one again. They also give you suggestions to use canned salmon, or even chicken or turkey instead of the tuna. I bet any of these variations would be delightful.
