Delicious and very easy too. Simply grilled scallops are served on a bed of vegetables cooked with bacon and dressed with lime that has elements of hot, sour, sweet and salty.
The dish is very quick to prepare and cook and makes a wonderful, bright tasting starter. The author suggests serving the ragout, which is actually more like a warm, fresh salsa than a vegetable stew, with baked halibut or salmon…..great idea for a quick, tasty main dish.
