Quite nice. I substituted golden syrup for honey, and dark rum for brandy. I also briefly considered using Grand Marnier, but as the dish already contains orange juice, I decided against it. When I was small, we used to have a similar dessert, that includes Grand Marnier. The advantage of this dish is that as you use an orange flavoured liquid independent of the alcohol, you can add a lot more liquid to make a nice sauce.
DH also liked the pumpkin seeds, but would suggest that next time we roast them (do that before frying the bananas, saves you a pan to clean up); I'm generally not a big fan of pumpkin seeds and wondered what it would be like to use chopped and possibly roasted hazelnuts instead. The crème fraîche gave a nice slightly sour accent; you could also use sour cream or Greek yoghurt.
