These crispy, lacy cookies that tasted of candied pineapple were easy enough to make but they stuck terribly to my super-non-stick silpat! They released only once they were almost fully cooled but by that time were too crisp to shape; I had to revise my plans to make dessert cups for serving frozen mango yogurt and make much smaller cookies for garnish instead.
