Cook's Illustrated really came though on this one. It isn't entirely simple, but not that difficult either. Do not skip the pear as it helps tenderize the meat in the marinade. In order to make pounding out the meat easier, I've started wrapping our back cement step in plastic wrap then pounding there. It's a solid surface and the process is much much faster.
