Sovay from Northern England,

Like gravadlax, but trout. It's lightly cured (24 hours only) so the trout does need to be fresh at the outset. I found the fennel seed a bit too strong which is why I've deducted a star; next time I'll probably reduce it by half and increase the lemon zest.
