This looks like a great recipe! But I'm curious - did you use the chia seeds or go with eggs? And what was the texture like - soft or crunchy?

I am so sorry that I am just now responding to this comment! I didn't get any type of notification for this... I hope this comment makes it to you! I used chia seeds. The texture was almost brownie-like - fudgy with a little bit of crisp edges. And I actually *just* wrote a blog post about a sub I made to these with crystallized ginger actually!
