We get roasted Poblanos from our Farmer's Market in late summer and this is an excellent use for them. It is very rich. The poblanos are stuffed with spinach sauted with raisins and pinenuts, then baked in a ranchera sauce and served with goat cheese and Mexican crema. Delicious!
