I made a half recipe of this for me for my breakfast. I used one whole egg and one white and fresh basil and parsley I had growing in my kitchen window. Loved the addition of a little garlic and Parmesan Cheese. It was delicious on it's own but I topped it with a bit of salsa which was also good.
