Had I known how simple it was to make chicken broth I would have started doing this years ago. This is so much better than what you get in stores, and it's a huge cost savings too. I made some pulled chicken sandwiches with the chicken when I was finished too. My stock pot barely fit everything, so make sure you're starting out with a big one. Also, I didn't plan ahead, and it was a little tough to get it in my freezer. I've heard you can condense it down though to make storage easier. I think in the future I'll can it so I can keep it in my pantry.
