This is really a review of the yogurt-mint dressing as I added tomato and red pepper as well as cucumbers and I used a "crisp lettuce" mix instead of spinach.
I was expecting a pretty good dressing as this is a Ben and Karen Barker recipe and they are the owner/chefs of one of my favorite restaurants, the Magnolia Grill in Duham, NC (the persimmon pudding there is seriously delicious if you are in the neighborhood). And pretty good is what I got. It is a more subtle dressing as the acid (lemon juice) is not the strongest note. A little tangy, a little sweet, a little creamy ... and not too minty. A nicely balanced dressing.
