Lobster rolls are one of my favorite cold meals. They are perfect for a hot summer night served with other cold sides and a cold glass of wine. I have never made lobster rolls before, but wanted to give them a try since my favorite Lobster Roll place in Chelsea market in NYC, is now 4-5 hours away.
Everything about this recipe is awesome. Chef Keller once again inspires with his tidbits, tricks and tips to take a simple meal and enhance it 1000%. The homemade herb mayonnaise adds a nice light touch. Sliced celery and pickled onions (p 257) add the perfect amount of crunch. I also managed to track down the New England Style Split Top Buns at Wegman’s and they are perfect for traditional New England Style Lobster Rolls.
I will make this recipe over and over again. These are my new favorite lobster rolls. They went excellent with Corn on the Cob w/ Lime Salt (p 188) and Coleslaw (p 198). Dividing the recipe by 3 is a perfect amount for 2 Lobster Rolls.
