Since skate is almost impossible to find in my tiny rural town I used the chart at http://www.reasors.com/foodfav/seafood/chart_sea.php. I found that flounder, which is easily found here, is a good substitution for skate, so I used that. This dish was amazing. I loved the brown butter and capers on the potatoes as well as the fish. Instead of the yukon gold potatoes called for I used some new red potatoes I already had on hand. I will definitely be using this method of poaching fish again.

What a fun adventure, and clearly with these two recipes you are off to a great start. Great idea on finding a substitute for skate - I typically don't even think about the recipe when it calls for something I cannot procure.

I'm really excited about this adventure. I know there are some recipes I won't make but hoping to make as many as possible. I don't typically substitute for a main ingredient but we were encouraged to if it meant we might not make the dish and there was a suitable substitute. One of the bloggers provided us with the seafood chart. It was interesting to see what others chose if they couldn't find skate.
