I didn't follow the recipe to a T -- I didn't make the parchment lid, for example, as I'm no good at arts and crafts -- but these onions still turned out delicious, very sweet and tender, and beautiful to look at. I used them in the Hash but I can think of dozens of applications for these onions, especially as they keep a few days in the refrigerator after cooking.

We often make sauteed onions to go with our steak. I decided to try this method and was very pleased with the results! Something about the texture and the taste really made these a great addition to our steak barbeques. I never cooked the onions without butter but the salt brings out the liquid and then adding the butter....this is an excellent compliment to our meal.

I made the Melted Onions to go into the Potato Hash (p 222). I’ve never made onions this way before, so I definitely learned something new. They recipe was really simple. They were a nice addition to the Potato Hash. I had leftovers and they went great reheated as a topping on hamburgers.
