I made fried oregano sprigs to add as a garnish to the Meatballs with Pappardelle (p 50). I would not have normally gone through the effort to fried a few springs for a garnish, but I just happened to have oregano on hand and since everything else was cooking, I decided to see if it made a difference. I was pleasantly surprised how the crispy, fried oregano added to the dish to give it texture and flavor.
