I LOVE this soup. It's the most beautiful shade of red and incredibly tasty. The main ingredients are beets, carrots, and red lentils, so it is extremely healthy, too. I followed the recipe exactly except I didn't add miso (didn't have any) and I forgot to remove the bay leaves when I pureed the soup. It didn't matter. So very, very good.
