Originally I thought it was all my fault - my oven is new and I hadn't realised how long it apparently takes to reach the required temperature. It took ages (think: about 40 minutes) for them to bake, and the resulting texture and flavour wasn't entirely perfect.
However, even the second batch took at least 30 min to bake and didn't taste any better at all. They were slightly gooey (or just underbaked), and there's just a faint taste of cappuccino, but not much, a little chocolate and nothing else. I do wonder why they require cappuccino powder along with other milk products such as buttermilk and cream cheese if you could add espresso instead. I like the idea of coffee or cappuccino flavoured muffins, but I'll rather look for another, better recipe.
I didn't try the mascarpone cream, so I can't judge that.
