A delicious casserole filled with wonderful things. This was prepared for our cookbook club. It apparently prepares a huge amount of food! I agree with other reviewers that it wouldn't hurt if some spices were amped up a bit.
Have made this in half and full versions. Quite good. Have noted that a dash of Tabasco sauce wouldn't hurt.

This is good. I used to make it often because it has some of my favorite things in it: sauteed mushrooms and onions, broccoli, wide egg noodles, ricotta cheese. It is a quintessential, old-fashioned American vegetarian type of dish. It contains all the food groups, and is especially satisfying in the colder months, but it is not refined in any way. The ricotta has a grainy texture here, unlike what you'd find in a well-made lasagna. If you like casseroles, you may well like this one.
