Quite sweet, perfumed. Nice if it fits the meal.
I didn't quite like the result of first boiling the carrots. It did make them very soft but not really roasted. And it totally beats me how he got the carrots in the picture so brown from 10 mins at 200C - mine only started to brown after about 20 mins on 260C.
