This is one of my staple sauces. I love the porky-ness and the slightly sweet flavor that the onions impart. Serving it with bucatini or perciatelli makes all the difference.

I haven't made this in a number of years but just reading over the recipe makes me smile. I served this a number of times for dinner guests in the mid-90s and it was always a hit. It is an easy dish to make and is a great excuse to pop open a hearty red wine. I think I will make this one again sometime soon.
