This is an excellent banana bread and very festive colored with the flecks of dried cranberries. I needed something to take to share with my friends I eat lunch with at work this coming week so I made this in mini Christmas pans. The author suggests making in mini loaf pans for gifts. It says 8 pans but I ended up with 11. That's great since I had more to share and some for my family to eat too.
