We love pimento cheese especially homemade. I usually use cheddar to make mine but since we also enjoy Velveeta I decided to try this one. Hubby and I liked it. I did use a 4 oz. jar of pimentos instead of the 2 oz jar called for. I think 2 oz was too little for a 16 oz block of cheese. I also didn't have my cheese at room temp before grating since Velveeta is so soft anyway couldn't see how you could grate it at room temp.
