I opted to use one of the suggested substitutions for lobster in this one. I had hoped to get some imitation lobster but ended up getting crab instead. I think this would also be good with the suggested shrimp. I left the cilantro out of husbands. I made a half recipe for daughter, hubby and I, giving us each a whole filled avocado. These were very fresh tasting and bright and crunchy as well as creamy just as promised. The little bit of dressing for the veggies that go inside was just enough to make this a perfect dish.
