This was great on the Pumpkin Pecan Layer cake (same page) but I think it would also be great one carrot cake. Can't wait to make the cake and frosting again.

This cake is so good. It's filled with fall flavors, pumpkin, pecans and ginger. The cream cheese inger frosting is great on it too from the same page.
I borrowed this one from the library but can't wait to add it to my collection.
