This presents well for a plated luncheon when the chicken is placed on the salad, not tossed with it. Asparagus vinigrette added to the plate gives the presentation an added lift.

Always turns out well. If sole fillets are small, 6 are required. I reduce the amount of vegetable oil in the Mayonnaise to 1 cup and that gives me the consistency and flavour that I like.

An excellent appetizer to have in the freezer. I find that a regular onion is rather strong and prefer to use a mild Spanish onion. Green onions work well here too!

Does not require 12 English muffins, but requires 6 muffins to yield 12 half muffins.
Great as an appetizer but can also be frozen uncut (as halves) and are then delicious served with soup for lunch.
