I'm not sure it's fair to rate this recipe because I really messed it up. But the reason for that is that it makes way too much spread for just me (or even me and my spouse together) to eat, even over a few days. It calls for two cans of white beans....

This is described as a lowfat sub for pad thai with a Japanese twist. I would make it again. Only craved the missing peanuts and fried tofu a little bit. Coworkers complemented the the nice appearance with different colored veggies included.
