While easy and quick to make, the dressing is not a good combination of flavors. I did not care for the orange juice and balsamic vinegar mixed together.

This Spanish Rice was delicious and very filling. The author recommends using this as a side dish, but it makes a great main dish as well. It takes a little bit longer to make (about 45 minutes), but does not require your attention the entire time.

I opted for flour tortillas and vegan cheese instead of cheddar, but these enchiladas were still delicious. They were quick and easy to make. I've made them several times when I need easy lunches made in advance for the week.
