We have had the pleasure of having authentic Posole in a friends house and it was amazing. While this doesn't have all the depth of flavors it was still delicious and easy to make in my Instant Pot. I'll be making it again.

Made this for our New Year's Day supper. Delicious with cornbread. Our good luck meal - collards, black eyed peas and ham hocks. I did and optional add in of canned tomatoes since I love BEP's with tomatoes.
