Great Balsamic Vinaigrette! I like that it isn't a "straight" vinaigrette, in that it is red wine and balsamic combo to the usual olive oil ratio. I added fresh oregano.

Fast and easy recipe. The chops are seared then covered for a quick braise. The sauce was tasty and the chops tender. Served with sautéd mushrooms and polenta.

This is an elegant dish that is very quick and easy to put together. You can vary the ingredients a bit depending on what you have on hand. Either vermouth or white wine works well in the sauce. I often use fresh sage instead of the tarragon it calls...
