These are such good meatballs. To make them a bit healthier, I skip the olive oil and I roast the balls on a rack on a sheet pan in the oven and then finish cooking them in sauce. I have also made them with all beef (super lean) and with various combinations...

This was very good. I added 1/2 cup olive oil and 1/2 cup white white to lemon sauce - I could not in good conscious add 1 full cup of olive oil to a sauce. It tasted fine - it didn't thicken as much as I wanted but I didn't give it a lot of time either....

An excellent chicken dish. I made for a crowd of 15 the first time I did it and everyone loved it. I will definitely be making this again - sooner rather than later.
