I love french potato salad. I agree with the other reviewer that I'm not sure how much the chicken stock and wine really adds to the salad, but I loved the results. I've made this twice and the second time I mixed some of the champagne vinegar after I quartered the potatoes. I love the scallions. The flavor is much milder than using red onion. I tend to like tangier salad dressing so this suited my taste.

This was good. I used it with the Nicoise salad.

I enjoyed this salad and was intrigued by the method of cooking the potatoes in boiling water (as opposed to starting the potatoes in cold water as I have always done in the past). I liked the touch of steaming them after draining and added the bit of wine and stock to re-moisten and add a bit of flavor. As with the other recipes I've made from this book, the amounts seem a bit off---I found the quantity of vinaigrette to be way more than needed for the amount of potatoes. The vinaigrette is a very good classic formula.

A good recipe, although I'm not sure what the initial step of adding the chicken stock and white wine to the potatoes adds in terms of flavor. I vary the herbs according to season.
