I'm afraid I was disappointed by this. I had expected the fennel and tarragon to stand out more, and I would have liked a note of richness somewhere.

This was a very refreshing and festive looking salad.
There was a lot to like about it: the crunchy texture, the delicious combination of fennel with pomegranate, and the tarragon that brought out the licorice flavour of the fennel. However, I found that the flavour was a little imbalanced as there were a lot of sharply-flavoured ingredients (lemon juice dressing, feta cheese, sumac) with very little sweet to counter-balance them. Some of this is probably a reflection of the quality of produce I used – the fennel definitely wasn’t as sweet as it could be – but I think a drizzle of honey into the dressing and perhaps less sumac would do wonders.
Definitely worth making again and probably deserving of 4 stars with minor tweaks.
