This dish had great texture but was surprisingly bland, especially coming from this author. There were some great nutty flavours provided by the quinoa, rice (I used black) and pistachios; the sautéed and spring onions and garlic added a savoury element, but the apricots, orange and lemon juices didn’t add enough zing to the salad. Using the juice of a whole lemon and adding some fresh orange segments provided some much needed brightness.
This salad was made for packed lunches and held up quite well for a few days without the rocket/arugula (and oranges)…..that was tossed in each day before eating.
