If I were rating flavour alone, this would easily garner 5 stars. The sandwich cookie captured the flavour and tanginess of the fruit and with the hint of basil, was a delicious bite.
The baking of the macaroons went well – as they should since it’s my third time making this recipe – but I had a major issue with the filling. It was easy to make and seemed to be going well until I added the lime juice and the emulsion broke. Warming it and re-beating it seemed to solve the problem but it split a second time while it was in the pastry bag waiting to be piped onto the cookies.
I really liked this flavour combination and this tart filling was the first I’ve had that provided a balance to the exceedingly sweet cookie. If I try it again, I’ll make sure the butter is a little warmer and I’ll incorporate the juice gradually…or I’ll just use lime curd instead.
