This dish was excellent indeed. A winner. The recipe suggests if you don't have red curry paste you can substitute curry powder and cayenne which I did. The flavor was awesome and added a lot to the cauliflower and onions. I confess I didn't have spinach on hand so I just left if out and the dish. I'd like to make this again with spinach. I'm sure it will be even better. Looking forward to having the leftovers for lunch.
