I don't know why I am surprised at how good this soup was ... I guess the humble ingredients and lack of seasonings -- other than salt and pepper -- lowered my expectations. Also, the picture in the cookbook wasn't very appetizing. But it had the great advantage that I had everything on the ingredients list in my pantry and fridge on a night when I had about 30 minutes to get dinner on the table.
We really enjoyed this ... very healthy and tasty. I made a second version replacing the potato with a can of cannellini beans (lifting the idea from another soup in this same book but skipping the barley in that one) and that was delicious too.
