An unusual pulled pork - moist and fully flavored.
This pork cooked all day in an interesting assortment of spices and apple cider. Spices included coriander, rosemary, cinnamon, thyme, allspice, ginger, etc. As it cooked, apple cider continued to be added to keep the meat moist. The end result was unusual and delicious.
The one odd thing about the recipe was that, after cooking, the juice, spices, and spring onions were supposed to be blended. This would have included the bay leaves - and so this step was ammended so the bay leaves were separated before blending.
