A wonderfully light and healthy recipe. Quick-cook some asparagus (but keep crispy), and brown some chunks of tofu. Then you cook the soba noodles and toss it with a sauce composed of lemon juice, butter, and white miso. Oh, and some chives. The soba with that sauce was amazing, and it was perfect with the tofu and asparagus. However, none of us cared much for the watercress.
