This is a simple dish and very good as written but I found myself making variations - stirring in oven roasted tomatoes, spicy pesto and grilled red onions.
Decent. Definitely filling, just not that creative of a recipe. I could come up with this myself - add some onion and mushrooms to quinoa... it tasted fine, but it didn't rock my world or anything.
Used brie. Excellent, and very filling.

Easy, tasty comfort food dinner. I substituted brie, which worked well.
